1) INGREDIENTS – SWEET MODAKAM (வெல்லப் பூரண கொழுக்கட்டை) :-
Raw rice (பச்சரிசி) – 1 cup
Grated Coconut -(துருவிய தேங்காய்) – 1 cup
Jaggery – (வெல்லம்) – 3/4th cup
Water for jaggery – (தண்ணீர்) – 1/4 cup
Cardamom powder – (ஏலக்காய் பொடி)- 1/2 tsp
Salt -(உப்பு)- to taste
Gingelly oil – (நல்லெண்ணை)- 1/2 small cup
Water – (தண்ணீர்)- 2 cups
(Ratio – 1 cup rice : 2 cups water)
2) INGREDIENTS – SALT (Urad Dal) MODAKAM (உப்பு/ உளுந்து பூரண கொழுக்கட்டை) :-
Urad Dal -(உளுத்தம் பருப்பு)- 1/2 cup
Salt – (உப்பு)- to taste
Green chillies -(பச்ச மிளகாய்)- 2
Red Chillies – (வத்த மிளகாய்)- 4-5
Hing powder – (பெருங்காயம் பொடி)- 1 tsp
Gingelly oil – (நல்லெண்ணை)- use from above
Mustard seeds – (கடுகு)- 1 tsp
Curry leaves – (கருவேர்ப்பிலை)- one strip
Grated Coconut – (துருவிய தேங்காய்)- 2 tsp
